A hot favorite amongst the indigenous people of Africa, Bobotie is the national dish of South Africa and has Malay and Dutch origins. With layers of delicious and toothsome flavors, Bobotie is essentially a baked, sweet and spicy minced meat pie topped with savory milk and egg custard.

Ingredients:
· 1 kg minced beef (lean)
· 2 tbsp. olive oil
· 3 slices white bread, toasted and pieced
· 2 large onions, chopped
· 2 garlic pods, minced
· 1.5 inch ginger, grated
· 250 ml milk
· 2 tbsp. curry powder
· 1 tsp. apricot jam
· 2 eggs
· 2 tbsp. Worcester sauce
· 2 tsp. turmeric
· 2 tbsp. vinegar
· 2-3 bay leaves
· 2 tbsp. fruit chutney/spicy tomato chutney
· Salt to taste
· ½ cup sultanas
· 12 almonds, blanched and chopped
Method:
· Preheat the oven to 350 ℉.
· In a bowl, soak the toasted bread pieces in the milk.
· In a pan, heat olive oil on medium and fry the onions till they soften up.
· Now add the minced beef and salt. Break up the lumps with a wooden spoon and fry for 5-6 mins until brownish.
· Just before the meat gets cooked properly, add the ginger and garlic. Cook well until meat becomes tender.
· Now add curry powder, Worcester sauce, turmeric, vinegar, chutney, apricot jam, sultanas and almonds. Mix well until the meat gets coated with the spices.
· Lower the heat and cook for 5 mins until the meat is infused with the spice flavors.
· Now squeeze the milk out of the bread pieces. Add the bread pieces to the meat mixture and keep the milk aside.
· In a separate bowl, add the eggs to the remaining milk and whisk well together.
· In a baking dish, pour the minced meat mixture and smoothen the top with a spoon. Cover with aluminum foil and bake for 25 mins.
· Now pour the milk and egg custard over it, place the bay leaves on the top and bake the Bobotie until the custard becomes golden brown.
Delicious and tangy Bobotie is ready to be served with some yellow rice, salad or steamed veggies!
