Don’t go by the name! It is 100% rabbit-free! Bunny Chow commonly called as a ‘Bunny’ is the most popular South African fast food. First created by the Durban Indian community of South Africa, Bunny Chow consists of a hollowed-out loaf of bread filled with tasty meat and veggie curry.

Ingredients:
· 1 kg lamb, cut into small chunks
· 2 loaves of bread, halved
· 2 tbsp. cooking oil
· 1 large onion, diced
· 2 tbsp. minced fresh garlic and ginger mix
· 1 tsp. green chilies, chopped
· 2 bell peppers, diced,
· 200 g potatoes, cubed
· 400 g tomatoes, blended
· 1 tsp. fennel seeds
· 2 large cinnamon sticks
· 4 cloves
· 6 green cardamoms, crushed lightly
· 1 bay leaf
· ½ tsp. turmeric
· ¼ tsp. cayenne pepper
· ½ tsp. black pepper
· 1 tsp. nutmeg powder
· 1 tsp. cumin powder
· 2 tsp. coriander powder
· 1 tsp. garam masala
· 1 tbsp. white vinegar
· 2 tsp. sugar
· 1 sprig curry leaves
· 1 ½ cup meat stock
· chopped fresh coriander
· salt to taste
Method:
· In a pot, heat oil over medium flame. Add cinnamon stick, cardamoms, bay leaf, cloves and fennel seeds. Fry until fragrant.
· Now add the onion, garlic and ginger mix, chilies, turmeric, cayenne pepper and curry leaves. Braise for 4-5 minutes.
· Add rest of the dry spices to the pot along with sugar and vinegar and mix well.
· Add the meat pieces and salt to the spice mix. Stir well until meat pieces become well coated with the spices. Add the meat stock, cover the pot and cook the meat for 10-15 minutes until brownish. Stir occasionally.
· Add the potatoes and bell pepper and cook for 5-6 min. When the potatoes and bell peppers are almost cooked, add the tomato blend. Cook until the meat becomes tender.
· Remove from heat and add fresh chopped coriander to the curry.
· Hollow out the middle of one half of a loaf of bread. Fill it with the curry to the brim.
